Justine Snacks' recipe inspired these viral blueberry cookies. Blueberries replace egg in this cookie recipe. You'd never know they're vegan—they're fluffy, crunchy, and flavorful. Vegan butter, sugar, and white chocolate morsels are required.
How to Make Blueberry Cookies
1 cup all-purpose flour,
lightly packed (135 grams)1/2 teaspoon baking powder1/8 teaspoon salt
1/3 cup vegan butter, softened (76 grams)1/3 cup plus 1 tablespoon granulated sugar (90 grams)1/3 cup frozen blueberries (80 grams)½ cup white chocolate morsels (70 grams)
Prep dry ingredients and blueberriesPreheat oven to 400°F. Flour, baking powder, and salt in a bowl.
Microwave blueberries for 30-45 seconds. Cool and mash.
Cream softened vegan butter and sugar with a stand mixer's paddle attachment. Then add blueberries. Mix the butter, sugar, and blueberries on high for five minutes. Keep scraping the bowl.
